Butcher Paper, Biodegradable, FSC? 7 Questions Every Admin Buyer Should Ask About Sustainable Burger Packaging

If you’re responsible for sourcing burger packaging for your office, cafe, or small business, the terms come fast: butcher paper, biodegradable, FSC certified, greaseproof, sustainable. Everyone promises eco-friendly, but what actually matters when you’re placing orders and managing budgets?

I’ve been in purchasing since 2020, handling about 60–80 orders a year across 8 vendors. Over that time I’ve learned the hard way which questions separate real sustainable packaging from greenwashing. Here are the seven I wish I’d asked upfront.

1. What’s the real difference between butcher paper and regular kraft paper?

Lots of people use the terms interchangeably. They’re not the same.

Butcher paper is a specific type of kraft paper that has been treated to resist moisture and grease — essential for wrapping raw meat or greasy burgers. Regular kraft paper lacks that treatment. It’ll soak through in minutes.

Here’s the kicker: many suppliers label plain kraft as “butcher paper” because it looks similar. I found this out the hard way — ordered 1,000 sheets for our cafeteria and got soggy wrappers by lunch. The difference is in the greaseproof barrier (usually a PFAS-free coating or denser fiber).

If you need grease resistance, verify the GSM (grams per square meter) and ask for a sample. Real butcher paper is typically 40–60 GSM with a smooth, wax-free surface.

2. Is biodegradable paper always compostable? (Spoiler: no)

This is the kind of nuance that cost me a conversation with our sustainability team. Biodegradable means the material will break down eventually — but in what time frame? A landfill can take decades, even for paper coated with certain barriers.

Compostable (especially certified to standards like ASTM D6400 or EN 13432) means it breaks down in a commercial facility within 90–180 days. Greaseproof paper often has a plastic lining that makes it non-compostable, even if the supplier calls it biodegradable.

What most people don’t realize is that “biodegradable” is a marketing term, not a certified one. Compostable requires certification. Bottom line: if you need end-of-life compostability, look for BPI or TÜV certification. Otherwise, biodegradable alone doesn’t help.

3. What does FSC certified really mean for burger packaging?

FSC (Forest Stewardship Council) means the paper comes from responsibly managed forests. But there are three labels: FSC 100% (all virgin fiber from FSC forests), FSC Recycled (100% post-consumer waste), and FSC Mix (a blend of certified and controlled sources).

For burger packaging, FSC Recycled is ideal because it closes the loop without new trees. But FSC Mix is very common — and not all suppliers are transparent about the mix ratio.

In early 2025, I consolidated orders for 400 employees across 3 locations and switched to FSC-certified greaseproof paper. I found that FSC Mix from a reputable supplier cost about 15% more than non-certified, but gave our marketing team a solid story for the annual sustainability report. 4. Can greaseproof paper be sustainable if it uses coatings?

Yes, but it depends on the coating. Traditional greaseproof paper uses PFAS (per- and polyfluoroalkyl substances) — the “forever chemicals” that persist in the environment. That’s not sustainable, even if the base paper is FSC certified.

Fortunately, PFAS-free alternatives exist: kaolin clay, starch-based coatings, or silicone (though silicone can complicate composting). Suppliers now offer PFAS-free greaseproof paper that meets FDA standards and is compostable.

I switched to a PFAS-free option in Q4 2024 after our compliance team flagged the risk. The cost difference? About 10–15%. But the peace of mind? Priceless.

Check your supplier’s technical data sheet for “PFAS-free” or “fluorine-free.” If they can’t provide it, move on.

5. How do I know if a supplier’s “sustainable” claims are legit?

This is the question I didn’t ask early enough. In 2022, a vendor claimed “100% eco-friendly butcher paper” — no certifications, no test reports. Turned out it was standard kraft with a thin plastic coating (which they didn’t disclose). That cost me $1,200 in wasted inventory and a credibility hit with the ops team.

Here’s my checklist now:

  • Ask for third-party certifications (FSC, BPI, Green Seal, USDA BioPreferred).
  • Request material safety data sheets and ingredient declaration for coatings.
  • Check if they’re listed on FSC’s public database (fsc.org) or BPI’s certified products list.
  • Require a sample pack — test grease resistance, printability, and feel.
  • Get written guarantee that product matches claims, with a penalty clause for non-compliance.

Seriously, I’d rather spend 10 minutes verifying than deal with another mismatched order.

6. What’s the cost difference between sustainable and conventional burger packaging?

Let’s be realistic: sustainable packaging usually costs more, but not dramatically. Based on my purchasing experience (60+ orders in 2024 alone):

  • Standard non-certified greaseproof paper: ~$0.12 per sheet (bulk, 1,000 sheets)
  • FSC Mix + PFAS-free: ~$0.16–0.19 per sheet
  • FSC 100% + compostable with certification: ~$0.22–0.28 per sheet

Prices as of early 2025 (major online distributors; verify current). The premium for sustainable ranges from 30% to 130% depending on certifications. But when you factor in brand value, regulatory readiness (some states are banning PFAS in food packaging), and employee morale, the gap narrows.

I’ve seen vendors who offer tiered pricing — a standard line and a “green” line — so you can start with mixed orders and scale.

7. Should I choose paper over plastic for burger wrapping?

It depends on your waste stream and composting infrastructure. Paper is renewable, but it takes more energy to produce and transport (heavier). Plastic is lightweight but fossil-fuel based.

For burger wrapping specifically, greaseproof paper is usually the better choice because it doesn’t require separate sorting in recycling (most plastic burger wraps go to landfill). Plus, paper can be composted if certified.

One caveat: if your local composter doesn’t accept coated paper, even compostable paper ends up in landfill. I learned this after investing in 5,000 compostable wrappers that our local facility rejected. Now I always call the composter first.

It took me 3 years and about 150 orders to understand that the “best” packaging isn’t a material — it’s a system. Material + collection + processing. That’s the sustainable equation.

Start with a pilot order. Test with your customers or staff. Then scale. You’ll save yourself a ton of hassle — and maybe a few hundred bucks in mistakes.
